My kids have been hungry when they come home from school. They look at me like, "come on mom, feed me." With never enough time ... we need something quick and satisfying. This isn't new but I had forgot how easy and was thrilled they loved it. A mini type of pizza that gives them some fuel to get through until dinner.
garlic tomato bread by ann west
Bread of any type will do. Mash some garlic into some butter. Slice your tomatoes thin and let them drain. Smear your bread with the garlic butter, lay on your tomatoes, a sprinkle of parm and some pepper and or herbs of your choice. Broil & eat!
There you go a great snack, mini meal or side! enjoy.
