{companions} a spin on sauteed spinach


It has been a tough week over here. This sunny flower lifts me. This side dish lifts me to. It is healthy and so good.


I was planning on making some sauteed garlic spinach. I decided to add a few ingredients so I wouldn't have to make a separate starch. It was delicious!

add olive oil & garlic to a pan and saute.

Add rough chopped tomatoes and saute for another minute or so. Add your spinach. Again saute 2 - 3 minutes. Then add croutons. Toss add salt and pepper and a sprinkle of parmesan and you are done. Now how easy is that?
