I have book club tonight! Yea!!! I love book club!
We always do a pot luck for book club. So everyone contributes - fun! In celebration of the sun returning to us here in Dallas I made a more summery salad - I don't think anyone will mind.
shrimp, avocado black bean salad by ann west
1 lb peeled and deveined shrimp
butter & olive oil
2 cans black beans rinsed well
1 nice slightly firm avocado
1 yellow pepper
salt & pepper
red pepper flakes
Saute your shrimp in some olive oil and butter and sprinkle with red pepper flakes. Drain and place in a bowl.
Rinse and drain black beans. Chop your yellow pepper and another clove of garlic. Chop your cilantro. Gently toss the black beans, shrimp, cilantro and garlic. Squeeze a lime and a lemon, sprinkle your salt & pepper, cayenne and more red pepper flakes (if you like). You need to make your seasoning adjustments here.
Peel and dice your avocado and gently toss into the salad. Garnish with a little more cilantro.
