roasted eggplant by ann west [an amy twomey inspiration]
1 or 2 eggplants
olive oil
salt
red pepper flakes
pepper
sprinkle of parm
slice the eggplant and let it sweat on paper towels. Oil your baking sheet and drizzle oil on the eggplants. Sprinkle with the spices and roast in a 400 degree oven for 20-30 min. or until done - the eggplant should be brown and crispy.
Amy turned me onto roasting the eggplant - thanks Amy. I had this with rice but I think a side of roasted tomatoes along with it would be awesome!

yum. I love it. I add pesto to mine and it is sooooo good. love it love it. Love the touch of red pepper flakes!
