{delightful} peanut butter kiss cookies


One of the nice things about summer is a request can be realized. After a day of swimming, running, playing with friends ... the kids settle down to read, watch a little something on tv and ask ... can we make cookies? The "we" of course is me!


With pleasure I begin to make the cookie that will always remind me of high school bake sales. Do you remember the endless rice crispy treats, m&m cookies, chocolate brownies and of course the peanut butter kiss cookie. I gladly gave my 50 cents for the glee club sale in order to have the sweet treat between classes. The highlight of my day I am sure.


I make these with my favorite peanut butter cookie recipe. The chocolate kiss just serves as a special treat in the middle of the cookie. So if you are strictly a peanut butter person keep reading and just omit the kisses. This recipe is fabulous!



peanut butter kiss cookies by ann west

pb cookie recipe adapted from The Fanny Farmer cook book

1 cup shortening
1 tbls vanilla
pinch of nutmeg (optional)
1 1/4 cup sugar
1 cup brown sugar
2 eggs beaten
1 cup peanut butter plus 2 tbls
3 cups flour
1/8 tsp salt
2 tsp baking soda

caster sugar - I love this super fine sugar for these cookies - but regular sugar is fine too!
chocolate kisses - unwrapped

Preheat oven to 350 degrees. Line your baking sheets with parchment. Cream the sugars with the shortening and vanilla. Add the eggs and beat well. Add the peanut butter and stir well again. Add your flour (which you have mixed with the salt and baking powder). Form into tiny balls, roll in the caster sugar and press a kiss into the middle. Cook for 11 - 13 minutes.


Serve to kids having fun with a tall glass of milk! enjoy!
